Let's face it, there's no bigger heartbreak in a video game than leaving loot behind because you're overencumbered. Even in The Elder Scrolls 4: Oblivion Remastered, you're forced to choose between the most valuable pieces of loot if you get overencumbered; and it's worse when it happens in a dungeon.

It's frankly the worst feeling in gaming. Even if it's just an un-enchanted longsword, I want to get value for my effort by selling it. It seems some players have found a loophole.
I Can't Carry It For You, But I Can Carry You
As demonstrated by Leyvaiathan on Reddit, you can simply load all the loot onto a corpse and pick up the corpse instead. Picking up an item, or a corpse, in this case, doesn't add to your carry capacity. So, you can just load them up with all the loot you've scavenged from the dungeon and hold the interaction key to pick them up and move them.
The reason OP went with a Storm Atronach is because they crumble into pieces upon being defeated. Learning how to summon one is key. You can then pick up one small piece loaded with loot instead of a whole unwieldy, flailing body. This is a great way to get all the loot out of a dungeon, after which you can use spells and potions to increase your carry capacity and fast-travel to the market.

While that is a sound technique, it's not as seamless as this one.
So, the next time you're overencumbered in a dungeon, you can simply summon a Storm Atronach, shatter it to pieces, stuff a piece of its corpse with all your loot, pick it up, and go on your merry way.
