Gathering gold can be a somewhat glacial process in Oblivion Remastered - at least, unless you're using PC mods or the item duplication glitch. How To Access Stolen Items Fences In Oblivion Remastered
The main way to sell stolen goods in Oblivion Remastered is by way of joining the Thieves Guild. It just so happens that we have a full guide on how to join the Thieves Guild which will set you straight in that endeavor.
In fact, between Thieves Guild quests, you must fence set amounts of stolen goods, earning the increasing trust of the fence NPCs themselves. Perfectly enough, upon entry into the guild, you're told where to find Ongar the World-Weary, your first fence.
Ongar is in Bruma. He has a shack here, but he'll frequently hang out at Olav's Tap and Tack instead. He's also perpetually tired, but he's still open for business 24/7.
In Oblivion Remastered (much like other Elder Scrolls games), merchants have a limited amount of gold at any given time.
We're not quite sure whether this was intentional, but in both the original version of Oblivion and its remake, this only actually means there's a limit to how much they'll purchase from you in a single transaction. By repeatedly exiting out of the sale menu and back in again, you can sell far more than 600 gold's worth of stolen merchandise to Ongar.
As you're promoted within the Thieves Guild, you'll gradually gain access to further fences. Here are their names:

Other Fences
There are other fences to barter with in Oblivion, though they require the Thieves Den DLC. Thankfully, all player house add-ons are included in Oblivion Remastered, whether you've purchased the Standard Edition or the Deluxe Edition.
You will need to have purchased (in-game, that is) the upgrades to the Thieves Den's Dunbarrow Cove home which add the three fences over time: Jak Silver, Khafiz, Kovan Kren, and Melliwin.
